If you haven't had cauliflower rice yet, you're missing out! This fried "rice" recipe is absolutely delicious—add chicken or shrimp for a complete meal! This Phase 2 recipe makes about 5 cups at 158 calories per cup.
3 ½ cups riced cauliflower (find it in the frozen vegetables section of your market)
olive oil cooking spray
¼ cup sliced green onions for topping
½ cup finely chopped onion
½ cup chopped carrots
½ cup frozen peas
½ tsp minced garlic
2 large eggs
2 Tbs low sodium soy sauce
1 Tbs olive oil
salt and pepper, to taste
Preheat medium skillet and spray with olive oil spray.
Add the onion and carrot to the pan, cook 3-5 minutes or until softened. Add the garlic and cook for about 30 seconds.
Season with salt and pepper to taste. Remove the vegetables from the pan, place them on a plate and cover to keep warm.
Pour 1 Tbs olive oil into the pan; add the eggs and cook, stirring occasionally and breaking up with a spatula until the eggs are scrambled and cooked through. Season with salt and pepper.
Add the riced cauliflower, reserved cooked vegetables, and the frozen peas to the pan. Stir in the soy sauce and cook until cauliflower has just softened, 4-5 minutes.
Top with sliced green onions and serve immediately!
