This loaded burger bowl serves up flavors without the added fat and calories. Lean ground turkey mixed with crisp veggies, pickles, avocado and a secret sauce! This Phase 2 recipe makes 1 serving at 379 calories.
4 oz. ground turkey
dash of garlic powder
salt and pepper, to taste
2 cups lettuce or spinach
½ cup cherry tomatoes, cut in half
½ cup sweet potato, cubed and cooked
¼ cup red onion, chopped
3 pickle slices (or ¼ cup chopped dill pickle)
¼ avocado, sliced
2 Tbs ketchup
1 Tbs yellow mustard
juice from ¼ lemon
Place a pan over medium heat and spray with cooking spray. Add ground turkey to pan and cook until no longer pink, about 8-10 minutes, stirring frequently. Then, sprinkle with garlic powder, salt and pepper and mix to combine.
Assemble the bowl with lettuce or spinach, cherry tomatoes, cooked sweet potato, red onion, pickles, avocado, and then top with 4 oz. ground turkey.
In a small bowl, mix together the ketchup, mustard, and lemon juice, then drizzle over the burger bowl.
