Shepherds pie is delicious and filling for lunch or dinner. This recipe supports the Phase 1 Healthy Solutions plan and Phase 2.
Ingredients

1 HMR Vegetable Stew with Beef Entree
-
2 red-skinned potatoes (8 oz total)

½ cup corn
-
¼ cup broth
-
1 Tsp butter substitute (to taste)

Salt and pepper to taste
Directions
Cook the potatoes in the microwave until soft.
Mash the potatoes with the broth, adding butter substitute, salt, and pepper. Set aside.
Pour the entree into an 8-inch casserole dish.
Add the corn in one layer on top of the entree.
Spread the mashed potatoes over the corn.
Microwave until warm. (For a golden brown top, heat at 350 degrees for 15-20 minutes).
