Saute carrots about 5 minutes in saucepan with non-stick cooking spray. Add 1 minced garlic clove and the zucchini. Saute 1-2 additional minutes. Add remainder of ingredients.
Season to taste with parsley, oregano, basil, red pepper flakes, and fresh ground black pepper.
Bring to a boil, reduce heat and simmer for 30 minutes, stirring often.
