Get your pasta fix with a healthy twist! Loaded with flavor and low in calories, this recipe mixes spaghetti squash with the HMR Ravioli Entree for a delicious Italian dish. This recipe supports the Phase 1 Healthy Solutions plan and Phase 2. This recipe makes 1 serving at 300 calories.
Preheat oven to 450 degrees and prep baking sheet with aluminum foil and cooking spray.
Cut spaghetti squash in half lengthwise and remove seeds.
Sprinkle with a dash of salt and pepper on the flesh side of the spaghetti squash, then place flesh side down on baking sheet and bake for 30-40 minutes, until golden brown and easy to separate flesh with a fork.
While squash is cooking, add remaining vegetables and garlic to a non-stick pan over medium-low heat and saute until tender.
When squash is done, use a fork to scoop out the strands of the squash and then add 2 cups of squash to the pan with the vegetables.
Continue cooking on low heat for another 2-3 minutes.
Add entree to pan and mix with vegetables. Heat until warm.
