1 HMR Cheese and Basil Ravioli Entree

2 cups spaghetti squash

1 red pepper, chopped

½ cup sliced mushrooms

¼ cup onion, chopped

1 Tsp minced garlic

Dash of salt and pepper
Directions
Preheat oven to 450 degrees and prep baking sheet with aluminum foil and cooking spray.
Cut spaghetti squash in half lengthwise and remove seeds.
Sprinkle with a dash of salt and pepper on the flesh side of the spaghetti squash, then place flesh side down on baking sheet and bake for 30-40 minutes, until golden brown and easy to separate flesh with a fork.
While squash is cooking, add remaining vegetables and garlic to a non-stick pan over medium-low heat and saute until tender.
When squash is done, use a fork to scoop out the strands of the squash and then add 2 cups of squash to the pan with the vegetables.
Continue cooking on low heat for another 2-3 minutes.
Add entree to pan and mix with vegetables. Heat until warm.
