Perfect for a cookout or any social gathering, these BBQ Chicken Sandwiches will hit the spot, without the added calories. This recipe supports the Phase 1 Healthy Solution plan and Phase 2. This recipe makes 1 serving at 380 calories.
Ingredients

1 HMR Chicken with Barbecue Sauce Entree

2 portobello mushroom caps

2 Tsp low-sodium soy sauce

Toppings of choice (lettuce, tomato, ketchup, mustard)
Directions
Preheat oven to 400 degrees. Prep backing sheet with cooking spray.
Clean mushroom caps and discard the stems. Then place mushroom caps on baking sheet and add 1 Tsp soy sauce onto each mushroom.
Roast mushroom caps for 20-25 minutes, until lightly browned on the bottom. Then remove from oven and drain any excess moisture.
Cook entree according to directions on package. Then separate the chicken pieces from the rest of the entree.
Build your sandwich by placing the chicken and condiments of choice in between both mushroom caps.
Serve the rice and bean mixture on the side.
